I've read a few opinions about the DLCs, and it seems that some players recommend to play the first run without any DLC, and some players recommend to enable all the DLCs except Crimson Court. I bought the Ancestral bundle (with all the DLCs) during the previous Steam sales, and I'm about to install and start the game for the first time.
